At The Lancaster Smokehouse and our sister restaurant Hog Tails BarBQue, our mission is simple: keep it local, fresh and homemade. It’s what makes us different. All our dishes are made from scratch in-house, including our sauces, dressings and even our mayonnaise!
All our meats are locally sourced from Ontario family farms, many of them are in Waterloo County and Mennonite owned. Our Chefs shop the local farmer’s markets for the freshest produce. We are committed to sourcing from our community and work with area suppliers to provide Ontario products wherever possible and in season.
All our Southern ingredients are sourced directly from suppliers across the Southern United States and we have visited them all! From the Louisiana Gourmet Popcorn Rice grown by Hampton Campbell and his family in Gueydan LA – to our artisanal corn grits hand milled by Glenn Roberts from Anson Mills in Columbia SC – to Slap Ya Mama Cajun Seasoning blended by the Walker family of Ville Platte LA. Our shrimp are the finest wild-caught Gulf white shrimp and our catfish is Louisiana farm raised.
In order to deliver authentic Southern cooking and flavor to our guests, it is imperative that we use authentic Southern ingredients and have connected and cooked with authentic Southern Chefs and recipes.
