BBQ Dry Rubs

Here is a BBQ dry rubs recipe that is easy to prepare a recipe that will have everyone coming back for more and tastes great.

INGREDIENTS

  • 2 tablespoons fennel seeds
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground peppercorns
  • 8 ground star anise
  • 1 clove ground garlic

PREPARATION

  • Heat the peppercorns and fennel seeds in a skillet for two to three minutes to release more aroma. Then remove the peppercorns and fennel seeds combine the remaining ingredients cinnamon, anise, and garlic into a food processor or blender and grind to a powder.
  • Can be used steaks, roasts, and poultry.
  • If not being used right away, place the contents in an air-tight container and store in a dry place until needed.

Spicy Chicken Kebabs

Here is a tangy marinated spicy chicken kebab recipe your guests should enjoy.

CHICKEN AND POLISH SAUSAGE KEBABS

  • 4 large skinless chicken breasts, cubed
  • 2 lbs. polish sausage sliced
  • 1/2 cup olive oil
  • 1/4 cup lemon juice
  • 1/4 soy sauce
  • 1/4 cup honey
  • 2 large green peppers cubed
  • 2 large red peppers cubed
  • 2 brown onions
  • 20 Italian tomatoes or 24 cherry tomatoes
  • 20 brown mushrooms
  • 1 bunch fresh cilantro/coriander (finely chopped)

PREPARATION

  • Combine all ingredients except for the chopped cilantro in a large resealable plastic bag and refrigerate overnight
  • When ready, remove the marinated mixture from refrigerator, place the ingredients ie: chicken cubes, polish sausage slices, green and red pepper cubed, onion slices, tomatoes and mushrooms on stainless steel skewers and put to one side.
  • Prepare the BBQ grill by covering the bottom grill with a single layer of hot coals (medium heat), installing top grill and placing the steel hopper (tray) with all the prepared skewers included, brush thoroughly with marinade and cook for 6-8 minutes per side, turning once or twice with the lid closed until done, sprinkle with chopped cilantro, then serve.

Grilled Large Tomatoes

Here is a vegetable recipe that everyone should enjoy.

GRILLED LARGE TOMATOES

  • 6 large tomatoes
  • 3 tablespoons Parmesan cheese
  • 2 tablespoons chopped parsley
  • 2 teaspoons garlic salt
  • 6 teaspoons melted butter

PREPARATION

  • Wash and cut tomatoes in half, place cut side up.
  • Brush tomatoes with melted butter.
  • Sprinkle about 2 teaspoons of garlic salt and 3 tablespoons of parmesan cheese over tomatoes.
  • Prepare BBQ grill by placing hot coals to one side of BBQ, (indirect method) installing top grill and brushing clean.
  • Put the prepared tomatoes on a Weber grill topper and place the grill tray on the side of the BBQ, away from the hot coals.
  • Cook over the grill for about 10-15 minutes.

Beef Tenderloin

INGREDIENTS

  • 4-5 Lbs beef
  • 2 tablespoon fresh chopped parsley
  • 1 1/2 teaspoons Kosher Salt
  • 1 1/2 teaspoons Black Pepper
  • 4 cloves Garlic
  • 1 teaspoon Paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon Dry Mustard
  • 1/4 teaspoon Ground Red Pepper

PREPARATION

Combine all ingredients in a small bowl then rub the meat with the mixture and place in large plastic bag and refrigerate overnight.

SAUCE

  • 1 cup Beef Stock
  • 1/4 cup Dry Red Wine
  • 1/4 cup Worcestershire Sauce
  • 3 tablespoons Barbecue Sauce
  • 2 tablespoons Vegetable Oil
  • 1 finely chopped Jalapeno
  • 2 cloves crushed garlic

PREPARATION

Combine all ingredients in a large skillet over medium heat and bring to a boil. Reduce heat and let simmer for 30-40 minutes to thicken the sauce. If not being used immediately, place in an air-tight container and refrigerate til needed. Prepare BBQ grill by placing hot coals to one side (indirect method), proceed by removing tenderloin from bag and putting it directly over coals for 3-4 minutes brushing it with prepared sauce until all sides are seared, then move it away from hot coals for 50-60 minutes brushing every 5-10 minutes. Cover grill and cook until meat thermometer reads 130-140 degrees. When done, remove roast from grill and let rest for 15-20 minutes before serving.…
